This is the kind of dish that levels up the flavour of your meal prep. This garlic chilli chicken hits that asian-heat-savoury trifecta with a garlicky punch to the tender chicken pieces. The best part? It’s high-protein and meal-prep approved. Whether you’re wrapping it in lettuce, spooning it over rice, or just snacking it straight from the pan, it slaps. Hard.
Ingredients:
- 2 chicken breasts (butterflied and scored)
- 1 tablespoon Mixed herbs
- 1 tablespoon Chinese five spice powder
- 1 tablespoon Garlic Powder
- 1 tablespoon Szechuan pepper powder
- Olive oil

Steps:
- Prepare your chicken breasts. Ours was quite thick hence we are making it thinner by butterflying into half. We also like to score the chicken breast to indicate the doneness of the chicken later.
- On one side first, add the seasonings: mixed herbs, five spice powder, garlic powder, szechuan pepper powder to the chicken and repeat on the other side of the chicken.
- Let sit to marinade for 30 minutes or overnight for extra flavour.
- On a pan at medium heat, drizzle olive oil and wait for 1 to 2 minutes to heat up the pan.
- Place the chicken breast and fry until desired doneness.
- Notes: We slightly undercook ours as we prefer a tender finish after reheating up for our meal preps and we cooked it for 8-10 minutes on each side. The cooking time may vary due to size of the chicken and heat level.
- Place the chicken on a plate to cool and cut into cubes or strips.
- Store in the fridge for 5-6 days maximum.
